  • 2 cups sunflower sprouts
  • 2 pears, firm, sliced
  • 1 cup peas, frozen, drained
  • 1 Tbsp. lemon juice
  • ½ cup walnuts


  • 1/8 cup lemon juice
  • ¼ cup olive oil
  • 1 Tbsp. honey
  • Sea salt and pepper to taste



  1. Place sunflower sprouts in a medium salad bowl.
  2. Add pears and lemon juice in a small bowl and cover pears well with lemon juice to prevent browning.
  3. To make dressing: add lemon juice, olive oil, honey, sea salt and pepper in a small bowl. Whisk lightly.
  4. Just before serving add pears with lemon juice to sunflower sprouts and drizzle with dressing. Toss lightly.
  5. Add dressing to salad just before serving
