5-Ingredient Oatmeal Banana Cookies

- 3 bananas ripe, mashed
- 2 cups oatmeal flakes
- ½ apple shredded or 1/3 cup apple sauce
- 1 egg or *“chia egg” for vegan version
- ¼ cup non-dairy milk i.e. almond
Optional Add Ins:
Chocolate Chip:
- 1 tsp. vanilla 1 tsp. cinnamon & ½ cup chocolate chips
Blueberry Gems:
- 1 tsp. cinnamon & ½ cup blueberries
Walnut Raisin:
- 1 tsp. vanilla 1 tsp. cinnamon, ¼ cup raisins, ½ cup walnuts
Lemon Berry Delight:
- 1 Tbsp. lemon zest ½ cup unsweetened dried cranberries
Preheat oven to 350ºF.
Place all ingredients in a large bowl and mix well. Place a heaping tablespoon on a parchment paper lined baking sheet and gently press until about ½ inch thick with a fork (if they are too thick it will take longer to cook). Don’t forget to leave space between cookies i.e. about 2 inches to avoid a “giant cookie”!
Bake for 18-20 minutes or until lightly browned. Cool completely and store any leftovers in the refrigerator for up to 4 days or freeze for up to 2 weeks.
*To make a “chia egg” simply add 1 Tbsp. of chia seeds + 3 Tbsp. of water, mix well and let stand for 5 minutes. Use wherever an egg is called for in baking recipes.
