Ingredients
1-15oz.1.5 cups can black beans, drained & rinsed well
1bananaincrease to 2 for a sweeter version
½cupquick cook oats
¼cupextra virgin coconut oilEVCO
¼cupmaple syruppure
2tsp.vanilla extractpure
2Tbsp.cacao powder
¼tsp.sea salt
½tsp.baking powder
½cupchocolate chipsoptional
strawberriesto garnish (optional)
Directions
Preheat oven to 350ºF.
Combine all ingredients in a food processor and blend until smooth. Fold in chocolate chips (if using), pour into lined muffin tin, filling ¾ full or a greased 8×8 pan. Using the back of a spoon dipped in a little water, smooth out the top of each muffin brownie or full pan
Cook for 15-18 minutes or until batter pulls away from the edge. Cool for 10 minutes before enjoying or cutting. Note- if they are still soft in the centre – you can refrigerate to set! Decorate with strawberries and enjoy! Refrigerate any leftovers for up to 4 days in the refrigerator or 2 weeks in the freezer.
