Cayenne Orange Spiced Peppers

- 4 sweet red & yellow peppers deseeded & cut into thin long strips
- 1 small red onion peeled and sliced thin
- ½ tsp. red or black peppercorns
- 1 tsp. orange zest
- 1 tsp. fresh thyme
- 2/3 cup water
- ½ tsp.+ cayenne pepper
- 1 cup apple cider vinegar ACV
- ½ tsp. stevia
Add peppers, onion, peppercorns, orange zest, and thyme to a wide-mouth jar, leaving at least 1 inch of room at the top of the jar.
Add the water, cayenne pepper, ACV and stevia into a small saucepan over medium heat. Bring to a light boil and then drizzle on top of the peppers leaving a half inch on the top of the jar. Let it cool at room temperature, then put the top in place and refrigerate overnight.
Variations:
For an Indian spiced version replace orange, and thyme with 1 tsp. cardamom pods, 1 tsp. coriander seeds , ½ tsp. mustard seeds, ½ tsp. cumin seeds and 2 slices of ginger root
