Salad:
2large zucchini’sor cucumbers, *spiralized
1cupcherry tomatoeshalved (red, orange, yellow)
½red bell pepperchopped
½medium red onionthinly sliced
½cupsmall cauliflower florets
½cupKalamata olivespitted
Dressing:
¼cupvegetable stocklow sodium & gluten free
¼cuplemon juicefreshly squeezed
¼cupapple cider vinegarACV
2Tbsp.mustardstone ground
1garlic cloveminced
sea salt & pepperto taste
Directions
Add the zucchini, tomatoes, pepper, onion, cauliflower and olives to a large bowl.
Whisk together the stock, lemon juice, ACV, mustard, garlic, sea salt and pepper. Drizzle on salad and toss just before serving.
